This year’s freshly-minted Spritzer Bar is rife with brand-new, expertly curated offerings. In a creative twist on a standard spritz, guests imbibing at Royal Boucherie this summer can select a base of either light (vermouth and aromatized wine), bitter (Aperitivos and Amari), or sweet (liqueurs), followed by a bubbly topper of one’s preference.
Step One: Choose from a bevy of light bases of vermouth and aromatized wine, with options including Cocchi Americano, Cocchi Rosa, Lillet Blanc, Lillet Rosé, Bordiga Rosso, Carpano Antica, Carpano, Classico, Carpano Dry, Moot Madeira, Dolin Rouge, Dolin Blanc, Dolin Dry, Trincheri, and Dry.
For those seeking a more bitter base in the realm of Aperitivos and Amari, offerings include Aperol, Bonal, Bonanto, Campari, Cappelletti, Eborista Aperitivo, Faccia Brutto Aperitivo, and Saler's.
Lastly, those who enjoy a sweeter summer sipper can personalize their base with a seasonal liqueur of any of the following: Apricot, Cassis, Cherry, Framboise, Melon, Müre, Pamplemousse, Pêche, St. Germain, or Pommeau.
Step Two: To top off one’s dream libation, cocktail enthusiasts will pick between Club Soda ($14), or Sparkling White Wine, Sparkling Rosé ($16).
This “build your own spritz” module is designed to encompass Royal Boucherie’s unique Amaro selection and provide guests with a personalized refreshing elixir throughout the summertime.

In addition, Royal Boucherie has just debuted an all-day seasonal menu in conjunction with the return of weekday lunch, available from Wednesday through Friday, beginning at 11am. The freshly-minted seasonal menu includes newly launched summer cocktails curated to please all types of imbibers, with highlights including Rue Des Fraises ($14), comprised of Arette Tequila, Pamplemousse, Montenegro, and strawberry, Oh Snap! ($15) fashioned with snap pea-infused Tito’s Vodka, lemongrass and bergamot, What’s The Dilly-O ($14) prepared with cucumber & dill-infused gin, Carpano dry vermouth, and honey, and Smokeshow ($14) composed of Banhez Mezcal, melon liqueur, and Thai green chili.
Royal Boucherie is open Monday through Thursday, 4 - 10pm, Friday and Saturday, 4 - 11pm, and Sunday, 4 - 9pm for dinner service, Wednesday through Friday, 11am - 3pm for lunch service, and Saturday and Sunday, 10am - 3pm for brunch service.
