How Chefs Omar and Cybille Tate Are Serving History at the New Honeysuckle

PHILADELPHIA- I’ve been a huge admirer of Chefs Omar Tate and Cybille St. Aude-Tate and their work at Honeysuckle for years, so when I heard they were opening a new, lofty reinterpretation of their restaurant on North Broad Street, my expectations were incredibly high. I fondly remember their "UNTITLED" dinner series at the original University City location, where Black history and culture were so brilliantly served up in refined, imaginative dishes. Let me tell you, after my first visit to the new Honeysuckleat 631 North Broad, they have somehow improved upon an already brilliant concept.

Stepping into the new space, you're immediately enveloped in an atmosphere that is both elegant and deeply personal. The walls are filled with art that celebrates the culture and reflects the inspiring journey of Omar and Cybille. It's the perfect setting for the incredible food that follows.

The menu is a testament to their ability to elevate familiar comforts into something truly special. We started with thedeviled eggs, a cookout classic here transformed into a sophisticated bite, topped with delicate crab and given a little citrusy heat from Scotch Bonnet peppers. It was the perfect opening note.

Then came theHaitian spaghetti, a dish that beautifully represents the restaurant's culinary philosophy. It was a complex and soulful plate of pasta with crawfish and boudin, all pulled together with a rich West African XO sauce. We also shared the barbecue sweet potato, which was both sweet and savory,a perfect, comforting side.

But I have to talk about the"McDonald’s Money"burger. This is pure, indulgent genius. It’s a decadent burger topped with classic Cooper Sharp cheese, but then elevated with briny caviar, shavings of earthytruffle, and even a touch of gold leaf. It's a playful reminder that simple pleasures can also be incredibly luxurious, and it was absolutely unforgettable. We paired our meal with some of their elegant and cleverly named cocktails, like the "I Said What I Said," which were as inventive as the food.

The new Honeysuckle is more than just a restaurant; it's a vital cultural and culinary destination.Chefs Omar and Cybille have created a space that is perfect for sharing classy comforts with loved ones, where every dish tells a story. It’s an inspiring and, most importantly, incredibly delicious experience that I can’t wait to have again.
